Representatives from Glier’s Sausage worked with Mepaco technicians on adjustments needed, and verification of cook and cycle times in our 100 sq. ft. test facility. The test was conducted with partner Rome Grinder equipment and Mepaco’s dual agitator ThermaBlend Cooker.
A versatile cooking solution, Glier’s Sausage selected the ThermaBlend Cooker due to its capabilities:
Cooking
The ThermaBlend cooker provides up to 50% more heat transfer area than conventional hemispherical kettles or other conventional jacketed cookers. The equipment can utilize direct, indirect, or both steam heating techniques substantially increasing batch cooking efficiencies.
Chilling
Options for cooling products after a cooking cycle include cryogen (CO2 or N2), vacuum cooling, or cooling jacket.
Sauteing
The cooker is capable of sauteing, blending and caramelizing.
Blending
The agitator design minimizes shear, and the bidirectional scraper system minimizes burn-on, making it a highly effective processing solution.
Safety and Sanitation
The cooker includes features such as electropolished interior finishes, CIP (clean0in-place) systems, and the highest level of seals and gaskets to prevent contamination.
Our team was on-hand to verify recipe controls, cooking times and overall cycle times. The Validation Lab also offers a space for collaboration with an attached conference room with window viewing into the testing room.
Other equipment in the Validation Lab includes onsite Leer cooler and freezer, a 50HP boiler, and washdown components with Sanimatic CIP and Gamma Jet.
Glier’s Goetta Sausage is a unique meat-and-grain sausage that comes from German ethnicity, made from a mixture of ground meat (usually pork and beef), steel-cut oats, onions, and a blend of spices.
